We are very pleased with our first purchases from Mathias at Republica! From El Salvador, now living in Canada, he is importing his family and friends coffees directly to North America! El Molino shows off a very classic El Salvador profile, and is a super comforting coffee.
It's a very easy drinking / easy to work with coffee! Low acid and big sweetness, it works great as a filter or an espresso. Notes of rich roasted almond, baked spiced pear, and a nice cocoa finish.
Salaveria Family & El Molino
The Salaveria family are long time coffee growers in El Salvador, with El Molino being one of their oldest estates. Named after the old semi-active coffee mill that is on their farm, Finca El Molino has beautiful volcanic soil, a strong cooling pacific breeze, and old Heirloom varietals, it's truly an ideal growing area in the Apaneca-Ilamatepec volcanic range.
