It’s a 1.5-hectare plot where the focus has growing higher scoring, modern varietals. This specific lot is a blend of his \u003cstrong\u003eYellow Caturra\u003c\/strong\u003e and the very first harvest of his \u003cstrong\u003ePink Bourbon\u003c\/strong\u003e trees.\u003c\/p\u003e\n\u003cp class=\"mcePastedContent\"\u003eThe workflow at \u003cstrong\u003eEl Carbonero\u003c\/strong\u003e is meticulous. \u003cstrong\u003eDidier\u003c\/strong\u003e harvests every three weeks to ensure he’s only picking at peak ripeness. The cherries then undergo a \u003cstrong\u003e24-hour fermentation in wooden tanks\u003c\/strong\u003e before being de-pulping. From there, the parchment sits for another \u003cstrong\u003e48 hours in dry fermentation\u003c\/strong\u003e within majolica(tile) tanks. After a final rinse, the coffee is moved to drying beds for 15 to 20 days.\u003c\/p\u003e\n\u003cp class=\"mcePastedContent\"\u003eThis level of effort is exactly why the coffee is tasting so good.
