Though the group has a communal wet-mill where most producers can process their coffee, \u003cstrong\u003eJosefa\u003c\/strong\u003e is able to use her mother’s de-pulper to process her own coffee.\u003c\/p\u003e\n\u003cp\u003eThis is our \u003cstrong\u003ethird year\u003c\/strong\u003e buying \u003cstrong\u003eJosefa’s\u003c\/strong\u003e coffee and it's the \u003cstrong\u003ethird year\u003c\/strong\u003e her coffee has been available under her own name, previously spending her time working as the driving force of quality for her mother \u003cstrong\u003eChristina Perez Ramirez\u003c\/strong\u003e.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eFollowing her mother’s practice, \u003cstrong\u003eJosefa\u003c\/strong\u003e picks \u003cstrong\u003eripe cherries\u003c\/strong\u003e and de-pulps the same day, and then let’s it\u003cstrong\u003e ferment for several days under tarp\u003c\/strong\u003e, as it can get quite cold in the higher altitudes! These higher altitudes attribute to the sweetness of the coffee with the long ripening due to the fluctuation of the temperatures.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThe coffee is then taken to a drying patio and left for \u003cstrong\u003e5-6 days\u003c\/strong\u003e. It’s a simple process, but allows for the quality of the fruit to shine. \u003cstrong\u003eJosefa\u003c\/strong\u003e does not use any herbicides on her farm.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eBrewing Recommendations:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eWe are absolutely in love with this harvest from \u003cstrong\u003eJosefa, \u003c\/strong\u003eall her classic buttery sweet notes are there, but this harvest is really highlighting the plummy sweetness always present in her coffee.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003ePour-over\u003c\/strong\u003e: 1:16-17 ratio, easy to work with, we love the 15g-250ml in the Kalita wave.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eEspresso\u003c\/strong\u003e: 18g-18.5g in \/ 37g-39g out \/ 27-30 seconds.
