Finca La Bendición, Mozonte, Nicaragua

We are so excited to have another coffee from Luis Alberto, a renowned producer out of Nicaragua. A Nicaragua Cup of Excellence winner, Luis is no stranger to quality coffee, and takes his growing and processing very seriously. He is a fourth-generation coffee producer, and his daughter is the fifth!

This lot comes from his finca, La Bendición, located in Mozonte, Nueva Segovia, right along the border of Honduras. On his farms Luis & his daughter grow many varietals, including this Caturra that is separated for natural processing. La Bendición is a true celebration of bio-diversity, with many indigenous trees and plants grown there to promote healthy soil and a balanced eco-system. 

They are meticulous and thorough, engineering a stable environment and logging as many of the factors that influence how coffee grows. Nothing that could influence the growing and processing of a coffee is missed, including environmental factors like the lunar phases!

Starting with hand picking only ripe cherries, this coffee is brought down to his Beneficio, Las Segovias, and is floated to get rid of any defects(good cherries sink, bad cherries float. Luis then spreads the cherries on raised African-style coffee beds for natural drying. This process can take up to 25-30 days for proper fermentation, with lots of turning, monitoring, and care.

This coffee is an absolute delight, big and juicy, with big sweet notes of Cherry Jam, poppy fresh Raspberry, summertime Florals, and all wrapped in a deep Dark Chocolate richness. Think Black Forest Cake

Brewing Recommendations:

Pour-over: 1:16-17 ratio in your fav pour-over, it extracts well so potentially grind coarser! 

Espresso: 18g-18.5g in / 37g-39g out / 27-30 seconds.
