Nano Genji
Suuuper excited to have a coffee from the famous Nano Genji washing station on the menu. Nano Genji has been one of my favourite washing stations, and is one of Aleco & Red Foxes' longest standing relationships.
This coffee comes from the Jimma municipality in the Agaro region, further divided into Woredas & Kebeles. The Geera woreda is where you'll find the Nano Genji washing station. Each Woreda in Ethiopia hosts the opportunity for presenting unique flavours due to their own micro climates.
At the Nano Genji Washing Station cherry's are bought and purchased from 819 smallholder producers averaging .1-2 hectares of farmland(this is very small). The cherry is washed and mechanically depulped before being soaked overnight, allowing for a small primary fermentation. The coffee is then dried for 6-8 days in raised beds, with frequent turning for even drying.
The processing in Agaro is precise and meticulous, and this always brings along clean, fruited coffees that express classic Ethiopian flavours. In this crop we're finding sweet berry jam, citrus, lots of florals & black tea.
