I first had his coffee from the legendary Bows in BC, and have since seen it offered at some other favourite roasteries. We had a super small lot of his coffee back in 2023, and have been keen to get him back on the menu since.\u003c\/p\u003e\n\u003cp\u003eNelson is a fantastic coffee producer, he tries his best to grow bio-dynamically, reducing his needs for chemical inputs. He is also a trained cupper, and knows the quality of his coffee, which is a powerful thing for a producer to know. Alongside his coffee plants Nelson also produces many fruit trees and raises farm animals, diversifying his crop, and income! \u003c\/p\u003e\n\u003cp\u003eNelson is a member of the \u003cstrong\u003eLos Guácharos\u003c\/strong\u003e association in \u003cstrong\u003eBruselas\u003c\/strong\u003e. They are a small group of independent, quality focused producers. The Have Fun OG's will remember \u003cstrong\u003eLuz Dary Polo\u003c\/strong\u003e was part of the same association, though sadly she has sold her farm and is no longer growing coffee.\u003c\/p\u003e\n\u003cp\u003eFor this \u003cstrong\u003ewashed processed \u003c\/strong\u003elot \u003cstrong\u003eNelson\u003c\/strong\u003e picks his \u003cstrong\u003eCaturra\u003c\/strong\u003e cherries when they're fully ripe, and does an initial whole cherry \u003cstrong\u003efermentation\u003c\/strong\u003e in sealed \u003cstrong\u003estainless steel tanks\u003c\/strong\u003e for \u003cstrong\u003e24 hours\u003c\/strong\u003e. He then de-pulps the coffee in his eco-pulper, and puts the wet parchment back in the tanks for another \u003cstrong\u003e24-30 hours\u003c\/strong\u003e of \u003cstrong\u003efermentation\u003c\/strong\u003e. He then washes the parchment clean, and then dries it first on his patio, before moving it a large covered canopy, where it will finish off drying.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eBrewing Recommendations:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eA super tasty, interesting take on a classic varietal from \u003cstrong\u003eCaturra\u003c\/strong\u003e.
