We are so excited to have this coffee from Luis Alberto, a renowned producer out of Nicaragua. Multi-time Cup of Excellence winner, Luis is no stranger to quality coffee, and takes his growing and processing very seriously.
This lot comes from his Finca, La Esperenza, located in Mozonte, Nueva Segovia, right along the border of Honduras. On his farm Luis grows many varietals, including this Bourbon that he separated for natural processing. His farm is a true celebration of bio-diversity, with many indigenous trees and plants grown there to promote healthy soil and a balanced eco-system.
Starting with hand picking only ripe cherries, this coffee is brought down to his Beneficio, Las Segovias, and is floated to get rid of any duds(good cherries sink, bad cherries float, generally speaking). Luis then spreads the cherries on raised African-style coffee beds for drying. This process can take up to 25-30 days for proper fermentation, with lots of turning, monitoring, and care.
This coffee is an absolute delight in the cup, and perfect for the upcoming chilly season. Soft cherry wine, a plush lilac jelly, and deep dark chocolate notes, almost like a tootsie roll hot chocolate.
This coffee performs excellently on filter or espresso. We recommend standard 16-17:1 brewing ratio for filter, and 1:2-2.1 for espresso.
