ASODIETT Cooperative, Todos Santos Cuchumatán
This is our second time buying from the ASODIETT Cooperative via our pals at Shared Source. Made up of about 30 families around the township of Mash in the Todos Santos Cuchumatán municipality, they are a diverse group with many members being of the indigenous Maya Mam ethnicity, speaking their native Mam as a primary language, and Spanish secondary.
We love the work they put into their coffee and their smart approach to growth. They've recently built a new warehouse to store their members coffees in a cooler more stable location, and have a second level for meetings and guests. The warehouse works as a community center, with a small community-led pharmacy on the first floor.
Though they don't have organic certification, the group use of cultural farming practices depend very little on synthetic chemicals and fertilizers. They make their own plant based fertilizer utilizing locally grown horsetail, compostables, and leaf litter, which helps return nutrients to the soil and keeps the trees resilient and happy.
In the cup this coffee is super clean and sweet, with ripe cherry, almond, and sweet milk chocolate on the finish.
