the coffee!
Everyone's favourite Pulp-natural is back for the second year in a row, and we're really enjoying this years harvest! Lots of Nectarine sweetness and rounded acidity, with sweet vanilla cake and fatty fudge rounding off this balanced cup.
Done pulp-natural style, this coffee is fermented with 80% of its mucilage left on the skin, before being dried on clay patios. This process brings a lot of the sweetness of the cherry into the seed, without too much risk of over-fermentation.
Salaveria Family & Finca San Francisco
Located along the Apaneca-Ilamatepec volcanic range, Finca San Francisco is owned and operated and operated by the Salaverria family. A beautiful farm along the hills of Apaneca-Ilamatepec volcanic range, it has beautiful native Heirloom Bourbon and Pacas growing there.
They named this lot Cerro Las Ranas which translates from Spanish to "Hill of Frogs" as there are lots of little frogs that live along the hills that encircle the Caldera Lake in the volcano.
This coffee is perfect for an easy drinking filter, and performs super well on espresso!
