Back for a second year in a row! Bombe Abore was our favourite natural Ethiopian we had on the menu last year, and can't wait to share it with you again. This years harvest is tasting sweet, vibrant and floral.
Managed and owned by Asefa Dukamo Korma, Abore Washing Station is located in the Bona Zuria Woreda (District) in the Sidama Region. The station services roughly 1,022 farmers in the area, growing coffee at an elevation of 1,920-2,020masl. These coffees are grown on small coffee farms, in backyard coffee gardens, and under the cover of Ethiopia’s cloud forests
The station processes both Natural and Washed lots, and this particular lot was separated for natural processing. Made up of primarily Ethiopian varietals 74110 and 74112, this natural lot's cherry was immediately placed on long raised drying beds. A weather dependent process, drying can take 16-25 days, with cherries constantly being turned and moved for an even fermentation.
We love how this lot is showing, reminding us of the what made us fall in love with natural coffees from Ethiopia. In the cup we're getting sweet fuzzy peaches, fresh elderflower, grape jelly & white tea.
Brewing Recommendations
Pour-over: 1:16-17 ratio, grind a bit coarser than you normally would to prevent a slow draw down.
Espresso: 18g-18.5g in / 37g-39g out / 27-30 seconds.
