This coffee is one we bought with alongside our new Yellow Bourbon for Can't Complain. Vitor Marcelo is one of the main coffee producers that works with the Barbosa Family. He is a key decision maker, working closely with Danilo, and does much for their farm management with a strong focus on their Sucuri farm, which is where our Yellow Bourbon was grown.
Vitor is known for his skills in experimental processing, winning the Brazilian Cup of Excellence in 2021 with a natural coffee. Topazio, named after the yellow gemstone, is a cross between Mundo Novo and Yellow Catui. It's short and compact in stature, and produces bright yellow fruit(duh, hence the name).
Though the processing of this coffee is relatively simple, it requires a lot of skill and watchfulness to make sure off flavours do not occur. After the cherries are ripened, they are picked and sorted before being put into barrels for a 96 hour oxygen-free Anaerobic fermentation.
The oxygen-free environment of the barrels allows for a very specific style of fermentation to occur, choking out many bacteria that rely on oxygen to grow. The results and be varied, but in this coffee we get a gentle sweet booziness, lots of big fruity flavours, and a fun jasmine tea, almost bubble gum esq finish.
