Chelbesa has always been one of my favourite regions for coffee out of Ethiopia, and when we got offered this amazing Natural lot from the Danche Station in Chelbesa, I was super excited!
Neighbouring the Chelbesa One washing station we also by from, the Danche station services approximately 800 local producers, all living around the station at 2200~ meters above sea level.
The area is renown for its amazing cherry, and the Danche Station puts a strong focus on high-quality processing. This particular lot is floated upon arrival, sorting the cherries and picking out any duds. It is then stored in tanks to dry-ferment for 3 days before being put out as whole cherries on raised beds to dry for 16-21 days.
We find this lot especially expressive and juicy, we think the addition of the 3 day dry-fermentation really drives up the intensity and sweetness of the coffee. We're reminded of the Nova Scotian classic desert, Blueberry Grunt covered in vanilla ice cream, with a sweet Fresca pop and classic notes of lavender.
It's a real treat for all the classic Ethiopian lovers out there, enjoyable as a pour-over, aeropress, or as a bright fruity espresso(super fun in milk, think cereal milk!).
