We're thrilled to feature this coffee from Danilo Sánchez, a producer we had the privilege of meeting last year on our trip to Honduras. Danilo traveled with us, sharing insights as we visited many incredible farms. We also have his wife Yensi Sánchez's coffee on the menu, and their two coffees were even blended together for our Valentine's seasonal "Love Bug" blend!
Danilo's journey in coffee began 15 years ago, learning the craft from his father on the family's plots. In 2009, his father passed down a piece of land, and with love and passion, Danilo planted his first coffee plants. He's steadily reinvested his earnings, expanding his crops to the five hectares he cultivates today.
As a third-generation coffee grower, coffee isn't just a tradition for Danilo's family; it's their sole source of income. He approaches his work with genuine passion, though the path isn't without its challenges. Each season brings uncertainty over labor shortages, and climate change consistently impacts their yields.
Despite these hurdles, Danilo and his family feel a profound sense of accomplishment. Coffee cultivation has provided them with what they need, but Danilo's long-term aspirations are focused on giving his children a better life than he had – ensuring they have access to good education, healthcare, and nutrition. He also dedicates himself to keeping his coffee plots in excellent, productive condition.
Danilo's passion for coffee is evident in every cup, and his family consistently strives to produce high-quality beans for all of us to enjoy. He extends his sincere gratitude to everyone who buys their coffee, recognizing that your support is truly crucial for his family's livelihood.
This particular coffee, a Parainema variety, undergoes a meticulous natural processing method. Cherries are harvested at peak ripeness and then go through a 50-hour anaerobic fermentation in sealed plastic bags. After this, they are carefully dried for 20 to 25 days under sunlight, with a protective plastic cover used to precisely regulate the temperature. The result in the cup is wonderfully sweet and floral, with notes of cherry nib sweetness and rose, rounded out by a smooth, creamy body.
