Up high on the slopes of the Turrialba Volcano you'll find the township and farm of Aquiares. Producing coffee since the 1890s, the quality of coffee from the Aquiares farm is renown, and this new hybrid varietal Mariana is no exception!
A cross between IAPAR 59 and Ethiopian Landrace, it provides a high level of rust and disease resistance along side amazing cup quality.
After being picked at peak ripeness, the cherries are floated to get rid of any duds. They are then placed in stainless steel barrels and undergo an oxygen-free fermentation. Coffee Mosto( the juice that runs off cherries undergoing fermentation) is added the the barrels to help kick-start the fermentation.
Temperature and PH are monitored twice daily, and when optimal PH is hit(usually after 1-2 days) the cherries are removed and dried in the sun for 10 days.
This coffee pops with bright juicy flavours, reminiscent of it's Ethiopian heritage, and brings all the fun of an anaerobic fermented coffee. In the cup we find sweet cherry coke, blackberry wine, hibiscus, and rich dark chocolate.
