Wilder Lazo
We're sooooo stoked to have the talented Wilder Lazo on the menu! This Chiroso from Wilder is a super fun one. Most Chiroso you see coming out of Colombia is grown around the town of Urrao in the Antioquia department, having one from Huila is a fun treat.
Taking over his family farm in 2016 with his brother Heiner, Wilder began modernizing their coffee producing style, gaining a lot of attention and notoriety throughout Colombia and quality seeking coffee roasters.
The Lazo family treats this coffee super well, picking only ripe cherries, and using a brix meter to ensure optimal sweetness!
The cherries are the floated to get rid of any duds ( under ripes and overly dry). They are then depulped the same day and fermented in a large tank for 56 hours submerged under water. From there the coffee is washed and dried in parabolic driers for 15 days.
This processing brings out clean fruited flavours of this coffee, with rich creamyness, and complex white tea. Perfect for a light filter coffee!
