We're beyond excited to have Yensi's beautiful Washed Parainema back on the menu for a second year in the row! This harvest is tasting even more vibrant and juicy, and we can't wait to share it with you.
Yensi is a third generation coffee producer, following in the tradition of her parents and grandparents. Her 1.5 hectare farm Bella Vista is near the Honduras-Nicaragua border is an ideal region for coffee growing, an area where mid-altitude varietals like Parainema do splendidly.
Alongside her husband Danilo, also a third generation coffee producer, they work hard to grow high quality coffee to support their family; providing good education and nutrition to their children, and stability for their family.
Her Parainema is picked at peak ripeness and de-pulped before being sealed in plastic bags for an initial 40hr ferment. After washing it is dried on raised beds under a plastic dome for 20-25 days. The resulting coffee is bright and lively, with a red fruit acidity balanced by a creamy lemon and deep sweet finish.
Brewing Recommendations:
Pour-over: 1:16-17 ratio, i’ve been really enjoying 15g coffee to 255g water for this, 3 min extraction on a flat bottom brewer. Also great doing an Iced Coffee, just replace 1/3 of your brewing water with ice to dilute the brew, and then serve over ice!
Espresso: 18g-18.5g in / 38g-41g out / 26-29 seconds - this coffee has big acidity, so if it’s feeling a bit to tart don’t be afraid to pull it faster, or stretch it out to 40g+ espresso,
